Our beautiful summer is here to stay for a while and yesterday evening was perfect for a wonderful crisp salad.
As you can see from the recipe I did not write down any of the vegetables amounts used to put the salad together. Everyone taste is different when it comes to Belgian endives and radicchio, therefore I left it up to you to use as much as you want or as little as you wish.
Vanilla ice cream with strawberries was our dessert.
Bon Appetit!!

You are welcome Tanny. Have a great day.
Oh how I wish our summer would arrive! Hahaha! This salad looks lovely and I’ll definitely book mark it for when our warmer weather arrives.
We can send you some of our sunshine if you wish… Thank you Karista.
Yes its healthy in summer….
Salad sounds yummy.. I’m starting a table for twelve soon, hoping to serve gourmet food… five course meals, so if you have any more interesting recipes to share I’d be more than glad!!
I would suggesting Bruschetta with a chilled glass of Champagne. Folowed by Fillet of Beef with a Gorgonzola sauce, roasted rosemary potatoes. Roasted carrots or tomatoes, steamed broccolis with Garlic olive oil.
If you choose fish: Kiwi shrimp cocktail, salmon with mushroom cream-wine-basil sauce, mashed potatoes, and ginger carrots.
For dessert I would go simple, eiter affogato or fresh fruit cocktail over vanilla ice cream. For adults may I suggest a dash of scotch or burbon or whisky over the ice cream and the fruit. I will go over well and it is the perfect ending to a faboulous evening. Let me know if you cannot found the recipes on my blog and I will be more than happy to send them to you.
Enjoy the night and keep us posted and thank you so much for reading my blog.
